A much remembered milestone in our production was introducing larger format 200 litre barrels rather than re-coopered 120 litre barrels. This incredible rum is the very first 200 litre barrel and worthy of applause. No different than a batsmen reaching a double century!
Pot distilled and aged for a minimum of 3 years in barrels emptied of bourbon and sherry. Notes of dried apricots, mango, paw paw, & sticky date pudding. Hints of dates, figs, cumquat & orange. Australian certified organic molasses, wild yeast, Woombye water, dunder & muck. 100% unadulterated.

Aroma
Lifted tropical fruit notes of pretty dried apricots, dried mango, ripe rich paw paw, figs and dates. Toffee, maple syrup and molasses, with touches of sticky date pudding, fruit cake and dried bananas.
Taste
Dry, rich intense tropical dried fruit such as dates, figs, orange and cumquat oils together with dense cedar, coffee and maple syrup.
